In this class the basics of regional French cooking will be discussed. Guests will prepare olive tapenade, served with baguette, chicken and sausage cassoulet, and ratatouille. We will serve a French pastry for dessert. Guests will prepare tapenade, cassoulet, ratatouille, and pastry cream. We will bake and assemble the puff pastry for dessert. In this class students will formulate a spice blend, garam masala, and utilize it in classic dishes from Indian cuisine. Preparation of butter chicken, and Mutter Paneer (peas and cheese).
